Chef Beth’s Lowcountry 7 Layer Dip with Pimento Cheese

Ingredients
    • 2 cups cooked sea island red peas, crushed with a fork
    • 1 recipe of pimiento cheese dip (recipe below), room temperature
    • 2 cups crème fraiche
    • 1 cup fire-roasted bell peppers, sliced into strips
    • 1.5 cups grilled corn, husked and shucked off the cob
    • 1.5 cups chopped tomatoes
    • 1 cup green onions, chopped
    • Saltine crackers or chips to dip
To Assemble
  1. Using a rubber spatula, spread the crushed red peas into the bottom of a square or rectangular glass baking dish.
  2. Next, spread the pimiento cheese on top, making sure not to mix too much into the beans.
  3. Spread the crème fraîche on top of the pimiento cheese
  4. Layer the remaining ingredients one after the other into even layers.
  5. Keep cool in the fridge until serving with crackers or chips.
Pimiento Cheese Ingredients
    • 12 ounces sharp yellow cheddar cheese block
    • 1 (4-ounce) jar pimiento peppers, chopped
    • 3/4 cup mayonnaise
    • 1/4 teaspoon cayenne pepper, plus more as needed
    • 1/4 teaspoon Worcestershire sauce
    • Kosher salt
    • Freshly ground black pepper
Directions
  1. Grate the cheese with a hand cheese grater.
  2. In a bowl, mix all the ingredients and taste for seasoning.
  3. Keep cold until ready to use.
