Chef Rhy Waddington is always thinking about elevating the dining experience, down to the smallest detail. His most recent creation is perfect for the summer season – a trio of BBQ sauces designed to complement the property’s barbecue offerings and beyond. We sat down with Chef Rhy to learn what inspired the idea, how he likes to use them, and where guests can find them at the Bluff.
How did the idea for creating your BBQ sauce trio come about?
Our BBQ sauces reflect the classics. Carolina Gold speaks for itself, the Apple BBQ is more of a sweet Kansas City style, and the hot sauce is a classic fermented Fresno pepper that is great on everything. I’m a condiments guy, so if you are going to have a BBQ-themed offering, you’d better have great sauces!
You have three flavors — how would you describe each one?
Carolina Gold is a vinegar-mustard base that’s great with our Niman Ranch Ribs. The Apple BBQ is sweeter and pairs perfectly with brisket. Our hot sauce is great on everything from tacos to fried chicken, and I even like it on grilled fish.
What are your favorite ways to cook with BBQ sauce (beyond the obvious)?
You can add a little of our Apple BBQ to your meatloaf mix or to a vinaigrette to accompany grilled vegetables from Farmer Shane.
