Fluffy, light, and easy-to-make, sweet potato biscuits are a unique and subtly sweet twist on a classic and the perfect addition to your weekend brunch or holiday menu. Ingredients:

• 4 cups all-purpose flour
• 4 tbsp baking powder
• 2 tsp kosher salt
• 4 tbsp brown sugar
• 2 lb cooked sweet potatoes
• 3/4 cups butter, diced and cold

Directions:

1. Mix all dry ingredients.
2. Add the butter and mix until pea-sized.
3. Slowly incorporate the sweet potato.
4. Make a few folds to create layers, then cut with a ring cutter of your choice.
5. Bake at 400 degrees for about 12 minutes.

Yields 24 biscuits.
